If you have been following my Bride in the Kitchen series on Fridays, you know that we started our marriage with evenings full of burnt dinners and overcooked mush. I had no idea what or how to cook and my sweet husband quietly suffered through it. I eventually learned how to cook and love testing out new and yummy meals but we are in a season of our lives where that just isn’t really realistic.
As the parents of two kids amidst the start of the wedding season, we needed something that was still healthy but met our love for trying new and varied foods. It also had to be a recipe that didn’t take 4 hours. We had heard about Blue Apron for awhile and about a month ago decided to give it a try. I was very skeptical of anything that involved delivering fresh food to our door.
What I was surprised to find out is that our grocery bill actually went down with using Blue Apron. Instead of buying whole bottles of spices or condiments we get exactly what we need for each recipe. This also cuts down on dishes when things are pre-measured for me. Total win – win!
The recipes are simple to follow and vary across a wide range of cuisines. For this recipe we made Salmon with Miso and Udon noodles. It was fabulous and I was impressed to see our two year old scarfing it down. We get two boxes a week and each box has two recipes that feed four people each. Because we have one picky eater in the family, there are times that we have enough for a leftover lunch meal the next day.
